Florence and Mathias have always loved cooking.
Their desire to discover new flavors and new culinary treats brought them to Australia where the culinary fusion between cultures constitutes an increasingly widespread phenomenon.
They tell you about culinary trends in Australia.
Australian cuisine is the result of modern and multicultural society. The several migration waves during the gold rush of the 1850s contributed to its ongoing enrichment. We talk about australian culture as a Western culture mixed with others. In some restaurants, you can read the title «Mod’Oz ». This is a fusion style cuisine with cultural blends between Asian and European cooking.
Eating habits in Australia
The mainstream of Australian culinary habits has strongly been influenced by english. A main course composed of a piece of meat with three vegetables still remains. The difference with english cuisine appears in the way the meat is cooked. As you probably know, in Australia the meat is grilled or smoked from a barbecue, called the “barbies”.
Another traditional dish influenced by british culture is the meat pie. This pie is usually served with peas, mash potatoes and the indispensable gravy sauce. To taste a good pie, go to a pub or a famous brewery in town. However you will always be disappointed by the ones sold in supermarkets.
Although Australia is surrounded by water, Australian culinary culture has never been into sea tastes. However it exists some specialities such as the scallops pie, a pie made with scallops that you can eat all around Tasmania.
Amongst the influencial countries, we find the United State of America with its burger. But the Australian one is much more exotic. You can find inside, in addition to the traditional steak and salad, a slice of pineapple, avocado, an egg and beetroot. It is interesting to see how beetroot is a popular and trendy vegetable in Australia extremely appreciated.
Influences from the Arab and Asian worlds also appeared in the types of meat Australian people eat. It is not rare anymore to find curry or chili flavoured chicken sausages. Lately in a supermarket, I saw french camembert and roasted onion flavored beef sausages. I haven’t tasted it yet. Butchers are wild spread in Australia.
Australia also seems to have became a multi-ethnic fast-food country. The concept of ” make your own » has concquered all cultures : chinese, japanese but mostly indian and mexican. You now can make the burrito or the wrap of your choice. There is something for every taste!
You can leave the table or get dessert!
Australians have a strong sweet teeth. The high number of bakeries in big cities proves it. Here again we find influences from England with the presence of the famous and popular cheesecake. Once again, there is one for every taste going from plain to white chocolate flavor! My heart balances between the Toblerone and the passion fruit cheesecake.
Obviously french patisseries are widely spread in the Australian culture. It is now common for Australian to order a croissant or a lemon tart in addition to an Italian coffee. The canele, speciality from Bordeaux, South West of France, is also becoming a nice little treat.
Another trendy dessert in the Australian culture is the Pavlova. Twice, while dining in two différent Australian families, this soft meringue was on the menu. The meringue base can be found ready-made in supermarkets. The only mystery that still occurs is the origin of it. Australian or Russian? It is up to you.
